Do you love avo on toast? Theres a reason that this trend has soared in popularity in recent years. Apart from its creamy consistency, avocados are rich in many key nutrients with their high potassium and fibre content one of the many reasons why the humble avocado has been dubbed a “superfood”.
The best part about avocado, is that it is so versatile and can be used as a key ingredient in everything from classic breakfast recipes all the way to dessert.
Here are 3 delicious ways with Avocado
Breakfast Avo Bowl
This is a quick and easy breakfast that you can create using staple ingredients in your fridge.
All you need is:

1/2 avocado halved flesh removed and de-seeded.

1 banana sliced (can use fresh or frozen)
-
1 handful of spinach and/or kale
-
1 cup coconut water/ or water
-
1/2 lime, juiced
-
optional: chia seeds to decorate
Method:

Add the avocado flesh, banana, spinach, coconut water and lime juice to a blender.

Blend until desired consistency is reached, ideally it should be smooth and creamy.

Add mixture to bowls and top with chia seeds.

Enjoy

Avocado Hummus
A great twist on traditional hummus that provides a nutrient boost as well as enhancing the flavour profile. This delicious dish can be used as a dip, or as a topping on anything from toast, skewers and wraps.
All you need is:

1 1/2 tablespoons extra virgin olive oil

2x 400g cans of chickpeas, drained and rinsed
-
2 large avocados, de-seeded and chopped.
-
1 garlic clove, crushed
-
1/2 lime juiced
-
2 1/2 tablespoons tahini
-
pinch of salt and pepper
Method:

Using a food processor combine all the ingredients. Pulse until well combined and a smooth and creamy consistency is reached.

Spoon mixture into a bowl and enjoy

Choc-Avo Brownies
Nothing says comfort food more than a rich fudgy brownie, they have a rich flavour that takes me back to my childhood when we would enjoy these on special occasions or as the occasional after school snack. I have made a healthy twist on the traditional brownie so you can have your cake and eat it too!
All you need is:

180g dark chocolate coarsely chopped

2 avocados, de-seeded and chopped

2 eggs
-
1/4 cup cacao powder
-
1/2 cup almond meal
-
1 1/2 cups coconut sugar
-
Pinch of salt
Method: makes about 24 brownies

Preheat the oven to 180 degrees C or 160 degrees C fan forced. Line a square cake pan with baking paper (any size pan will do, but I have used a 20cm base measurement pan).

Melt the chocolate either in the microwave or in a heatproof bowl over a saucepan of simmering water. Be sure to stir frequently to ensure all of the chocolate is melted.

In a food processor, process the avocados, eggs, cacao and salt until all combined and the mixture is a smooth consistency. Transfer this mixture to a large bowl and gently fold through the melted chocolate, sugar and almond meal.

Bake for 30 minutes or until a skewer inserted comes out clean.

Allow to cool in the pan, then slice and top with crushed pistachios. Enjoy
