Feeding fussy eaters can be quite a challenge. Finding the time to prepare a healthy family dinner can also be a challenge in our ever more time poor society. Here I have created a classic twist on a beloved family favourite, that is full of nutrients, flavour and easy to prepare.
Chicken Parmigiana

Contains:
- 3 serves of vegetables
- 1 serve of grains
- 1.5 serves of protein
You’ll need:
- 500g sweet potato, peeled and sliced into strops
- 4 chicken breasts, with skin removed
- 2 slices baked Italian ham, diced
- 1/3 cup breadcrumbs – to make gluten free, swap for gluten free breadcrumbs
- 1/2 cup parmesan cheese
- 250g green beans
- rosemary
- tomato puree
- olive oil
- 1 tablespoon Italian seasoning
Method:
Preheat oven to 220 degrees Celsius. Line a baking tray with baking paper. Place sweet potato and rosemary on tray and drizzle with olive oil. Place on top shelf of oven and bake for 20-25 minutes or until golden.
Place chicken in a shallow baking dish and add tomato puree
Combine ham, breadcrumbs and parmesan in a bowl. Sprinkle mixture over chicken. Line a baking tray with baking paper. Place chicken on tray and bake for 15-20 minutes or until cooked through and topping is golden.
Bring a saucepan of water to the boil. Add beans and cook for 2 minutes or until just tender. Drain.
Serve chicken with sweet potato and beans.
