Greek Style Stuffed Capsicums

You’ll need:
- 8 yellow or red capsicums
- 80g of grated parmesan cheese
- 1 sprig of parsley, washed
- 3 stale bread rolls
- 1 clove of garlic
- 300g of ricotta cheese
- 3 eggs
- 70g melted butter or margarine
- 200g cooked ham, diced
- olive oil to taste
- salt and pepper to season
Method:
Wash and dry the capsicums. Slice off the top and remove the seeds and white internal filaments. Pre-heat oven to 200 degrees Celsius.
Blend together the garlic, the parsley, the stale bread, the ham and the grated parmesan cheese. Pour this mixture into a bowl and add the eggs and ricotta. Mix well, add salt and pepper to taste. Flavour with a dash of olive oil.
Fill the capsicums with the mixture and arrange them side by side in an oven dish greased with margarine. Place in oven and cook for 40 minutes. An easy weeknight dinner that also makes for a delicious lunch the next day.
